Ginger Spice Mix

The spice routes connected the East and West for over 2000 years, supplying us with cinnamon, cardamom, cloves, pepper, nutmeg, saffron and turmeric to name a few. These spices are not only awesome for flavouring food but also have medicinal properties too.

When I was an air hostess I often went to Baku, on the British route to India, where spices and cashmere were often traded. I loved seeing the history, experiencing the atmosphere and learning about the spice route.

Spices and herbs play a massive part in my kitchen and I can’t wait to share recipes with you. For now here is the best, wintery spice mix, which can be used in crumbles, pies, cranberry sauce, spiced nuts and soups.

Ingredients

3tbsp ground cinnamon

3tbsp ground ginger

1.5tsp ground allspice

1.5tsp ground cloves

3/4tsp ground nutmeg

A pinch of each ground cardomom and coriander

Method

Simply pop them all into a mixing bowl and incorporate all the ingredients.

Store in an air tight container, for up to 12 months. Trust me it won’t last that long!
