Gingerbread Nuts

If you have ever been to a Christmas market you will remember the smell of the spiced nuts. Perhaps you battled the queue and bought some!

Well, let me give you the recipe that will wow your family and friends. They can be enjoyed on their own, or as a topping on many dishes. I personally love them with yoghurt and granola.

These almonds and pecans are totally moreish, and make THE most perfect edible gift… If you can resist the temptation that is! Present these in festive tins or glass jars on their own or as part of a homemade edible gift hamper.  

Ingredients

1 cup whole almonds

1 cup pecans

½ cup granulated sugar

¼ cup water

1tsp gingerbread spice mix

1 tsp vanilla extract (please use the bean version not the cheap version)

Method

Put the nuts, sugar and water in a nonstick pan. Cook over a medium heat, stirring constantly until the water evaporates.

Before the sugar clumps together add the spice mix, the vanilla and a pinch of salt.

Place on greaseproof paper to cool for about an hour, before storing in one of your chosen airtight containers.
